This sweet and tangy mango slaw makes for the best addition to Pulled Pork Tacos. The combination of the sweet mangos and the crisp red cabbage is so mouthwatering. This is such an easy recipe and can be made in a snap. Just allow to chill in the refrigerator for a few hours before serving.

To start, add shredded red cabbage and carrots to a large mixing bowl. In this recipe, I use pre-shredded cabbage and matchstick carrots that can be easily found at any local grocery store. This is a time-saver, but if you prefer to shred your own that’s great too.

Dice 2-3 mangos and add to the slaw mixture. Then add sliced green onion, and fresh chopped cilantro. Sprinkle in salt and pepper to taste, along with the cumin and smoked paprika. Squeeze in fresh lime juice, and toss with apple cider vinegar and agave for a touch of sweetness. Cover and allow to chill for 2-4 hours before serving.

Sweet and crunchy mango slaw, perfect addition to pulled pork tacos!

Ingredients

  • 8 Ounces of shredded red cabbage

  • 2 Cups of matchstick carrots

  • 2 Tablespoons of sliced green onion

  • 2 Mangos sliced and cubed

  • 2 Tablespoons of apple cider vinegar

  • Fresh cilantro

  • 1 Tablespoon of agave

  • Salt and pepper to taste

  • 1/2 Teaspoon of ground cumin

  • 1/4 Teaspoon of smoked paprika

  • Juice of 1/2 lime

Directions

  • In a large mixing bowl add thinly sliced red cabbage, shredded carrots. and sliced green onion.
  • Add fresh chopped cilantro and diced mango.
  • Stir in apple cider vinegar and agave to sweeten.
  • Season with salt and pepper to taste.
  • sprinkle with cumin and smoked paprika and give a light toss.
  • Add fresh squeeze of lime juice toss and cover and refrigerate until ready to use.
