What I love the most about the beginning of summer is all the colors of the season are just starting to bloom. Days are now longer and patio season is here. Salads are a simple and healthy food of the summer and one of my favorites is this Strawberry Summer Salad. Made with a blend of fresh baby romaine, baby arugula, strawberries, and basil, it’s pretty much everything I have in my garden every year. You can’t get any fresher than that.

Strawberries are such a great choice of fruit to add to salads and make a beautiful presentation on the table. My favorite way to serve this salad is family-style on a large platter. For the dressing, I love this salad simply dressed with just a drizzle of olive oil and a fresh squeeze of lemon, it really brightens this dish. Drizzle the balsamic glaze and top with fresh cracked pepper and you have yourself a delicious Strawberry Summer Salad the whole family will enjoy.

What You Will Need

Baby romaine

Baby arugula

Fresh strawberries

Fresh basil

Feta cheese

Extra virgin olive oil

Fresh cracked pepper

Juice of a lemon

Balsamic Glaze

How To Make

Start by adding the baby romaine and baby arugula to a large platter. I combined the two greens together and start building the salad. Once the greens are placed on the platter slice 6-8 large strawberries into thin slices cutting horizontally. Place the strawberries evenly over the salad, and then cube up half of the block of feta. I like to have larger pieces of feta throughout the salad for a heartier bite. Add the feta to the salad and chop fresh basil and sprinkle over the salad. Drizzle extra virgin olive oil over the salad and squeeze a fresh wedge of lemon juice, being sure to coat the entire salad. Sprinkle with fresh cracked pepper and drizzle of balsamic glaze and this fresh Summer Strawberry Salad is ready to serve.

Delicious and refreshingly sweet summer strawberry salad.

Ingredients

  • 4 cups of baby romaine

  • 4 cups of baby arugula

  • 6-8 fresh strawberries

  • 1/2 block of feta cheese cubed roughly 3 ounces

  • 3 tablespoons of extra virgin olive oil

  • 6 fresh basil leaves

  • Balsamic glaze

  • Fresh cracked pepper to taste

  • Juice of 1/2 of lemon

Directions

  • Toss together 4 cups of baby arugula and 4 cups of baby romaine and place on a large platter
  • Slice 6-8 strawberries horizontally into thin slices and evenly distribute over the salad
  • Cube the feta cheese into larger cubes and add to platter
  • Drizzle salad with olive oil and fresh squeeze of lemon juice
  • Add fresh cracked pepper
  • Chop fresh basil leaves and sprinkle over the platter
  • Drizzle with balsamic glaze and serve
