Pulled Pork Tacos

There is something about pulled pork that’s slow-cooked that just makes my mouth water. Put some in a taco and I’m in food coma heaven. These pulled pork tacos are simply delicious. The best part is that the crockpot does all the work. It makes for such an easy weeknight meal, and everything can be prepped ahead of time. The mouth-watering Sweet & Tangy Mango Slaw is the perfect crunchy addition to these pulled pork tacos. Once the tacos are assembled, top with fresh cilantro and a squeeze of lime, and dinner is ready.

What you will need:

3-4 Pound pork shoulder

Blue Moon beer

Salt and pepper

Cumin

Pit Boss Pulled Pork Rub or a mixture of salt, pepper, granulated garlic, cumin, onion powder, paprika, and brown sugar.

Bbq sauce

Juice of an orange

Small flour tortillas

Fresh cilantro

Lime wedge

Fresh queso

How to make bbq pulled pork:

First, start by generously rubbing the dry seasoning over the pork shoulder and place it in the crockpot. I like using the Pit Boss Pulled Pork Rub, it’s an easy step and the flavor comes out delicious. If you prefer to make your own rub, I have made the pulled pork both ways, just combined salt, pepper, brown sugar, cumin, granulated garlic, onion powder, and paprika. When making your own rub, there are endless possibilities, if you like a sweeter pulled pork add more brown sugar. For a spicier rub, add some chili powder, diced up jalapenos.

Add the Blue Moon, and juice of half an orange and cook on low for 8 hours. When it comes to adding the beer, any beer can be used but I like a heartier brew, such as Blue Moon. The hint of orange peel just adds the best flavor. Chicken stock may be used in its place. Once the pork is cooked and fork-tender, take it out of the crockpot and place it on a sheet pan and pull it apart with a fork. Add it back into the crockpot and add the bbq sauce and cook for an additional 45 min to an hour. The pork will still be tender if cooked on high for 4-6 hours, however, when it comes to my personal preference I like to allow to slow cook for the full 8 hours.

To prep the tacos:

Start by filling small taco-sized flour tortillas with the bbq pulled pork. Add the Sweet & Tangy Mango Slaw, and drizzle with bbq sauce and a fresh squeeze of lime juice. Then top with fresh chopped cilantro and if you cant imaging your tacos without cheese, add some fresh crumbled queso or sour cream.

Delicious slow cooker pulled pork tacos, an easy weeknight meal.

Ingredients

  • 3-4 Pound of pork shoulder bone in or boneless

  • 6-8 Ounce of Blue Moon ( chicken stock can be used in its place)

  • Salt

  • Pepper

  • 1 Teaspoon of cumin

  • Generous amount of Pit Boss Pulled Pork Rub

  • 1 1/2 Cup of barbeque sauce and drizzle for serving

  • Juice of 1/2 of orange

  • Small flour tortillas 2-3 per serving

  • Fresh lime wedge for serving

  • Fresh chopped cilantro for serving

  • Fresh crumbled queso cheese (optional)

  • Mango Slaw ( recipe linked below)

Directions

  • Season pork on all sides with salt, pepper and bbq dry rub.
  • Place your crockpot settings on low and add the pork, Blue Moon, and juice of a half of orange and cook on low for 8 hours. or 4-6 hours on high
  • Remove the pork from the crock pot and place on a sheet pan and gently pull apart with a fork.
  • Add the pork back into the crock pot and add the bbq sauce and let cook for about 1 hour more.
  • Fill the flour tortillas with pulled pork, and top with mango slaw, fresh cilantro, and enjoy. Crumble some fresh queso optional.
