Mini Cheesecake Bites

If you love cheesecake, and who doesn’t, you’ll love these cheesecake bites. This dessert is very rich so the little bite-sized version is perfect for a small sweet treat. I like to cheat and make this recipe even easier by buying the pre-made cheesecake filling in a tub by Philadephia. It is perfect and no one will know you didn’t spend hours in the kitchen preparing homemade cheesecake. No-fuss, no-muss, no-bake!

Top with anything your heart desires, I made a batch with raspberry jelly and drizzled white chocolate over top, using hones graham crackers. For my second batch, I used chocolate graham crackers and topped with salted caramel and dark chocolate. Make your own salted caramel here, and it’s so much fun! You can use just about anything to top these mini cheesecakes or nothing at all!

How To Make Cheesecake Bites

Start by taking 15 graham crackers, which equals two cups crushed. Put them in a food processor in two batches to crumble them perfectly. Combine the brown sugar with the cracker crumbles. Next, add your melted butter and mix. I like to use my hands when mixing the crust, it just combines better. I used mini cupcake liners and placed them on parchment paper on top of a sheet pan. Now, using a half teaspoon I packed it with the graham cracker mix and dropped a teaspoon into each mini liner. I used a half tablespoon measuring device, rounded side down, to flatten each scoop into the bottom.

Finally, it’s time to add the cheese. It is best to pipe this in. Not only is it easier but more pleasing to the eye. Bam! Add desired toppings and you’re done! This recipe makes 150 mini cheesecake bites. Cut the recipe in half for smaller gatherings. I estimated three bites to equal one serving.

Mini Cheesecake bites that are sure to delight!

Ingredients

  • 2 cups crushed graham cracker (15 cracker)

  • 1/3 cup light brown sugar

  • 3-24oz containers Philadelphia Cheesecake Filling

  • 8 tablespoons unsalted butter (melted)

Directions

  • Combine crushed graham crackers with the sugar and then add melted butter
  • Scoop half a teaspoon of the graham mixture into mini cupcake liners, press down
  • pip cheesecake filling on top of graham crust
  • top with chocolate drizzle or jam and chill before serving
