Turn your ordinary salad into a bright and fruity healthy dish. This delicious salad is packed with Vitamin C from the seasonal citrus and gives your immune system the extra boost it needs. I like to have fun and add bright colors to my plate makes it that much more appealing to eat.
Enjoy any time of the day, and can be a start to any main dish, add some salmon for some added protein and omega 3s, or add in some quinoa for a vegetarian source of protein. The options are endless with this salad.
What You’ll Need:
2 Cara Cara oranges (1.5 sliced thin and skin peel removed)
1/2 juice for dressing.
Few handfuls of spring mix
Radishes
Cherry tomatoes
Shave of parmesan
Fresh mint
Fresh cracked pepper
Extra virgin olive oil
Juice of Cara Cara oranges
A drizzle of balsamic reduction
Rose vinegar * ( if you are unable to find rose vinegar a good replacement is a delicate white wine vinegar I just add a touch of honey for a bit of sweetness.)
You’re going to love this citrus salad! Start by washing your greens and start peeling and slicing the Cara Cara oranges. Next prepare your radishes. I love using cherry tomatoes because they are so cute and easy, with no prep. Chop your fresh mint and arrange your salad however you like. Drizzle with balsamic and vinegar and shave your fresh parmesan. Lastly, top with fresh cracked black pepper.
Things to help you out in the kitchen in this recipe include a large square serving platter and a good knife set. I absolutely love my cheese shaving knives. They are just so classy looking on the board. This brings me to my favorite butcher block. I use it for everything, it’s definitely a must-have kitchen staple of mine.

Simple & Fresh Citrus Salad

Ingredients
2 Cara Cara oranges and juice of 1/2 *see note
Few handfuls of mixed baby greens
2 radish
Fresh mint
5 Cherry tomato halved
3-4 shaves of fresh parmesan
1 tablespoons of extra virgin olive oil
Fresh cracked pepper
2 tablespoons Rose vinegar *see note
Balsamic glaze
Directions
- Start with a few handfuls of spring mix
- Slice and peel cara cara oranges and layer them over the bed of greens
- Slice radishes and add to salad
- Add the cherry tomatoes
- Chop the fresh mint and sprinkle over salad
- Drizzle with extra virgin olive oil
- Squeeze 1/2 of the cara cara orange
- Drizzle with the rose vinegar
- Add freshly shaved parmesan
- Add the fresh cracked pepper
- Drizzle balsamic glaze over citrus slices and enjoy!
Notes
- For the Cara Cara oranges, I save half of the orange for juicing over the salad. You can add the juice of the orange and the extra virgin olive oil with the cracked pepper and the vinegar in a mixing bowl and make a vinaigrette however I like the simplicity of just layering the ingredients for a simple brightness.
- Rose vinegar is sweet and delicate. It is more of a specialty item that when I see it in my local markets I will stock up on, however, this salad will still be delicious with a white balsamic.
